First Course
Smashed Plantains, Grilled Shrimp, Hollandaise de Pique La Localis, Salsa de Frutas. Wine Pairing: Thibaud Boudignon, Rosé de Loire, Savennieres, France, 2019. MOFONGO! We had to, we had a delicious version at Sal y Pimiento in Fajardo. We made some Pique (vinegary hot sauce) and wanted to bring some heat and a Localis flare to the dish! Every spot in Puerto Rico has a pique la casa! This incredible Rosé comes from an amazing producer and was a perfect fit for the balance of flavors in the dish. We even reached out to our old friend and employee Frank to get the low down on proper mofongo techniques! Chilled Prawn, Mussel, Crab, Clam, Octopus, Grilled Pineapple, Ground Cherries, Red Hatch Chili, Lime, Tostones. Optional Pairing: St. Rey, Chenin Blanc, Sacramento, CA, 2019 I really wanted to do a different style of "Ceviche" and wanted to play on a different flavor profile. Tostones were going to make an appearance no matter what, but this is the perfect vessel for the salad. It has a decent spice level and some good textures. What better to pair with this dish than a crisp, balanced, Chennin Blanc from right here in our back yard!

Llano Seco Pernil, Cabbage and Cauliflower Slaw with Roasted Pepper Vinaigrette, Red Bean Puree, Culantro Coulis, Plantain Chips Optional Pairing: Gamba, Family Ranches, Zinfandel, Russian River Valley, CA, 2016 How could we not do pernil pork? So flavorful and rich. There is no other pork to use for us as Llano Seco does it right. This dish blends the bright crunchy slaw with the braised pork for a perfect match with the Zinfandel from Gamba. We know you will be thinking about getting outside and enjoying a picnic.
Fourth Course
Cinnamon-coconut Bread Pudding, Sweet Cream Coffee Ice Cream, Coffee Shortbread Crumb, Dark Chocolate Ganache Optional Pairing: Coffee and Cream Cocktail * Shake Cocktail and Pour Over Ice Coffee is serious business in Puerto Rico! We had some wonderful coffee there and loved the iced coffee culture. We wanted to bring our bread pudding back and this was the way! It might not be morning but anytime is a good time for dessert!
Second Course
New Potato Chips, Corn "Cheese Sauce", Pickled Nardello Peppers, Seared Foie Gras, Foie Gras Powder, Cilantro. When I created this dish I was doing my normal work-through about flavor and texture when an employee walked up and said, "foiechoes, looks dank" . We were sold!! Such a fun dish and, while we don't use foie gras often, this is a very fun way to eat it. Caraccioli makes some of my favorite wines in California. This chardonnay, made in the Burgundian way, accents all the right elements in the dish. Wine pairing: Caraccioli, 'Escolle Vineyard', Chardonnay, Santa Lucia Highlands, California, 2014

Butter Poached Lobster, Coconut Arancini, Chili-Tomato Puree, Tomato Salad with Pique 2 Vinaigrette Optional Pairing: The End of Nowhere, 'Spaceboy', Pinot Gris, Herringer Vineyard, Yolo County, CA, 2019 This amazing restaurant in Fajardo is well-known by travelers and locals alike. It sits on the beach in town surrounded by fish mongers. Families were waiting outside listening to music and enjoying Sunday. When we got our Lobster Makito it was a massive Lobster covered with seafood. Only olive oil and salt were used— AND IT WAS AMAZING!! We also had some coconut arepas but wanted to use the flavor of coconut and transform it into a textural match.

Bacalaito, Chicken Empanadilla, Alcapurria, Pique 1 Mayo-Ketchup Optional Beer Pairing: Urban Roots, 10*, Czech Style Lager, Sacramento, CA +$2 We had to include the amazing cuisine found along the Pinones. The smell of the grills and the beautiful old kettles full of bubbling oil. Slaves brought the cooking style and Puerto Ricans transformed the cuisine to fit it. These need to be eaten in your car so they are fresh and delicious. Ketchup-mayo is everywhere on the island, we wanted to give it a hit of spice!! Paying homage to the cold Medalla that is traditionally served with street food, we share one of Peter Hoeys favorite beers!! 10* is an incredible lager and fills that perfect match to fried food.
